I don't know where to start. I know I must have clicked on something that caused it, but now when I have multiple instances of programs like Excel or Outlook, there are grouped together somehow.
How do I undo that?
I have now turned off Actual Windows because of the inconvenience.

John,
There is no option in Actual Tools products that can influence how taskbar icons are combined. There is the option among the settings of native Windows 10 taskbar - Combine taskbar buttons (System taskbar context menu > Settings > Combine taskbar buttons). Seems like this option is set to "Always, hide labels" in your system. Try other modes and see whether it helps. Let us know the result.
Best regards.
