No matter what settings are selected, the "pin to desktop" option is always present in the window menu (left-click on window titlebar).
To reproduce, in version 5, unselect all options in the window menu tab, and make sure no other setting specifies a window-menu option. Save settings, left-click window title, and notice the Pin to Desktop option is present. This option is also not listed in the Window Menu settings.

Thanks, the necessary changes will be available in the next version of
Actual Tools
programs.

As promised, the Actual Tools programs' UI was improved in the newly released
version 5.1
. Now you can remove (in the
Window Menu property sheet
) or reposition (in the
Window Menu Options property sheet
) special "Pin to desktop" and "Restrict placement" window menu items as well as any other menu items.
