This may be a bug in the ATI driver rather than AMM but I'm finding that switching from dual screen to single screen, the clocks get stuck at 500/1250 until I reboot.

Hello Derek.
This problem is most likely not associated with our program. To make sure unload AMM and try to switch your monitors with the standard means of Windows (Screen Resolution).
If the problem still persist then it's not associated with AMM.

Yeah, it downclocked OK switching with CCC but now is when switching with AMM as well, so I'm not sure what was going on there. I'll do some more tests if it happens again.
